[What is Siberian Ginseng?]

Eleutherococcus, also known as eleuthero or Siberian ginseng, grows in mountain forests and is native to eastern Asia including China, Japan, and Russia. Traditional Chinese Medicine has used eleutherococcus for reducing lethargy, fatigue, and low stamina as well as increasing endurance and resilience to environmental stresses. Recipe: (makes around 20)
- 2 cups of oats
- 7-10 medjool dates (depends on how sweet you would like it)
- 1/3 cup of pumpkin puree
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg

Pit the dates.

Blend the oats until flour like consistency.

Add the cinnamon, nutmeg, and pumpkin puree and blend.

Gradually add in the dates and around 3-4 tablespoons of water (especially if using a blender rather than a food processor).

Place on a tray and freeze for about 10-15 minutes so it’s a little easier to roll.

Roll into balls, optional to roll into various toppings such as shredded coconut, ground flax seeds, cacao powder, cinnamon, etc. And enjoy!
