[What is elderberry extract?]

Elderberry extract comes from the fruit of the Sambucus nigra or Black Elder, a species found in Europe, Western Asia, North Africa, and North America. Called “the medicine chest of the common people,” Elder flowers, berries, leaves, bark, and roots have all been used for centuries in traditional folk medicines.Elder fruit contains vitamins A, B and C, flavonoids, tannins, carotenoids, and amino acids. Elderberry is believed to possess therapeutic uses as an anti-inflammatory, diuretic, and immuno-stimulant.

I got bored..so I decided to shoot a quick easy breakfast video. Here is my take on blueberry muffins made from scratch! Hope you enjoy!

Recipe:

Ingredients:

1 1/4 cup of sugar of choice. I love coconut sugar in this recipe as well. Alter to your liking by 1/4 cup.. especially if you have sweet blueberries and will use the lemon sugar topping.

2 cups of flour
2 eggs
2 tsp baking powder
1/2 tsp salt
1 tsp vanilla extract
Fresh Blueberies
1/2 cup of oil. Coconut oil works well in these as well
1/2 cup of milk of your choice. Try with Almond milk or you guess it… coconut milk.
Lemon Zest
Extra sugar for topping

Set over at 350` F or 180 ` C
Whisk together flour, baking powder, and salt in small bowl. Set Aside
Combine in another bowl all the wet ingredients plus sugar… whisk until blended.
Place wet ingredients with dry ingredients. Whisk until blended. Fold in fresh blueberries.
Place batter in greased muffin tins. Top with lemon zest and sugar.
Bake in oven for 25 minutes or until the toothpick insert comes out clean.
