[Function]

Ingredients:
Dry:
1 Cup Almond Flour/Meal
1/2 Cup Ground Flaxseed
3/4 Cup Pecan Halves
1/4 Cup Erythritol
1/2 tsp Baking Soda

Wet:
1/2 Cup Coconut Oil
2 Large Eggs
2 tsp Maple Extract
1 tsp Vanilla Extract
1/2 tsp Apple Cider Vinegar
1/4 tsp Liquid Stevia

Directions:
Preheat oven to 325°F.
Chop Pecans in a food processor and save 1/3 for later (for the topping) and move 2/3 to a large bowl.
Combine all wet ingredients together in another bowl.
Combine all dry ingredients into the large bowl with the 2/3s chopped pecans.
Add the wet ingredients to the dry ingredients and mix well.
Disperse batter between 11 muffin cups and sprinkle remaining 1/3 chopped pecans amongst them (press them into the muffins a bit)
Bake for 25-30mins.

Pumpkin pie smoothie bowl

Ingredients:

For the pumpkin pie:

1 1/2 cups baked and cooled pumpkin. You can bake your pumpkin but its faster if you boil it.
1 3/4 cups vegan milk
3 ripe persimmons
cinnamon
nutmeg
clove
cardamom
vanilla bean or vanilla extract
*add in some protein powder if you wish!

Blend all these ingredients and pour into your favorite breakfast bowl!!! Now its time to get out your toppings! Here is what i used in the video but feel free to top your smoothie with anything you want!
