Stevia sugar features high sweetness and low calorie and its sweetness is 200 350  times of that  of cane sugar but its calorie is only 1/300 of that of cane sugar.

The component of stevia extract that gives it its sweetness is a mixture of various steviol glycosides. The components of sweetness in stevia leaves are stevioside, rebaudioside A, C, D, E and dulcoside A. Rebaudioside C, D, E and dulcoside A are small in quantity. The principal components are stevioside and rebaudioside A.

The quality of stevioside and rebaudiosideA is better than those of other components, which are commercially extracted and used in various applications.

The steviol glycosides present in stevia extract are referred to as “steviosides” or ¡°stevia extract¡±. Among these “steviosides”, the most common is Stevioside followed by RebaudiosideA. The Stevioside has a slight and pleasant herbal taste and the Rebaudioside-A has no herbal taste.

Although Rebaudioside C and dulcoside A are small in quantity in stevia extract, they are the major components giving bitter aftertaste.

    Sugar and Spice Pepitas:

    Yields: 2 cups
    Difficulty: Easy, but you need to carefully follow the instructions so the nuts separate and don’t stick together
    Prep Time: 10 minutes
    Total Time: 30 minutes

    Ingredients:

    Non-stick vegetable oil spray
    2 cups pepitas, shelled and raw
    ½ cup sugar
    1 large egg white, beaten until frothy
    1 tablespoon chili powder
    1 teaspoon ground cinnamon
    ½ teaspoon kosher salt
    ¼ teaspoon cumin
    Dash of cayenne pepper to taste.

    Directions:

    Preheat oven to 350 degrees.
    Spray baking sheet liberally with nonstick spray.
    Mix all dry ingredients, except pepitas in a small bowl.
    Toss pepitas in a large bowl with the egg white until completely coated.
    Coat the pepitas with the dry ingredients.
    Spread the pepitas in a SINGLE layer on baking sheet.
    Bake until pepitas are golden and DRY, stirring occasionally, making sure the nuts aren’t sticking, about 15 minutes.
    Remove from oven and cool on parchment paper in a single layer.
    Separate the pepitas with a fork while they are warm. Cool.
    The pepitas will keep in an airtight container for up to two weeks.

    Healthy Living Made Easy!

    To be able to better show the friends in our Facebook group, “No Way Holiday Weight Gain”, how to cook a healthy alternative to pasta called Spaghetti Squash I decided to record and upload it today. I am posting this as great lunch or dinner item that you can either eat like spaghetti with spaghetti sauce or as I side with some veggies and chicken.

    Ingredients:
    - 1 Spaghetti Squash
    - Butter
    - Black pepper
    - Seasoning Salt
    - Garlic Powder
    - Water

    The Process:
    - Preheat over to 400 degrees
    - Cut Spaghetti Squash in half
    - Apply butter or Olive Oil to the inside of the squash
    - Season as I list above or the same way that you typically season your spaghetti noddles
    - Let bake for 30-35 minutes or until you can easily pierce the outside of the squash with a fork
    - Scrape out the Spaghetti Squash!

    Bake, Scrape, Serve, and enjoy!

    Spaghetti squash is nutritionally superior to regular pasta, which doesn’t contain any vitamin and has a very limited nutritional content. This nutrient can also help filter out homocysteine from your blood and promote cardiovascular health.

    Potassium, a mineral that maintains proper muscle and nerve function, is also present in spaghetti squash, making it helpful for people with high blood pressure. Manganese, a mineral that assists in bone and tissue heath, metabolism, calcium absorption, and nerve function, is another key component.9 Spaghetti squash also contains the essential minerals calcium, iron, phosphorus, and zinc.

    Another reason to consume spaghetti squash is for its omega-3 and omega-6 fats content. Omega-3 fats are associated with the prevention of inflammation, which may cause heart disease, arthritis, and certain types of cancer. On the other hand, omega-6 fats are linked to proper brain function. It is critical to maintain the ideal 1:1 ratio of these fats.
