    लौकी की खीर
    मेरे भाइयों और बहनों,
    मैं आपको लौकी की खीर बनाना बताऊँगा। इसका बनाना बड़ा ही आसान है। लौकी की खीर बड़ी ही स्वास्थ्यवर्धक और स्वादु होती है।
    सामग्री
    ½ लीटर गाय का दूध, 1 लौकी (वजन 400 ग्राम), 100 ग्राम चीनी (सुगर), थोड़ी सी इलायची (जिसका छिलके निकाल कर काले रंग के बीज को पाऊडर बना लें), थोड़े से काजू और बादाम (इनको छोटे-छोटे टुकड़ों में काट लें)
    विधि
    लौकी के बाहरी छिलके को स्क्रेपर से छील लें। इसके दोनों तरफ हिस्से को काट दें। इनको दो-तीन टुकड़ों में काट लें। इनको बीच में आधा काट लें। इसके बीच के हिस्से में बीज आदि को निकाल दें। बाकी लौकी को घीया कस से बारीक-बारीक लच्छों में कस लें। इसको आप अलग रख दें। कसे हुए लौकी के लच्छों को स्टील बर्तन में डालकर थोड़े से शुध्द गाय के घी में 2-3 मिनट तक सेंके। आप स्टील बर्तन को गैस पर रखें। इसके बाद आधा लीटर गाय का दूध डाल दें। दूध डालने के पहले आप थोड़ा सा पानी डाल दें जिससे दूध स्टील बर्तन में नहीं लगेगा। तुरन्त ही बाद आप गैस को ऑन कर दे। जब दूध उबलने लगे तब आप स्टील बर्तन में लौकी के कसे हुए लच्छे डाल दें। जब दूध उबलकर तीन चौथाई रह जाये तब तक दूध को मिलाते रहें। दूध बर्तन से नहीं लगना चाहिये। तब आप दूध में इलायची के पाऊडर को डाल दें। इस सारे घोल को 2-3 मिनट तक उबलने दें। इसके बाद 100 ग्राम चीनी (सुगर) डाल दें। इसको 2 मिनट तक गर्म होने दें क्योंकि चीनी से छोड़ा गया पानी सूख जायेगा। इसके बाद गैस को बन्द कर दें। लौकी की खीर खाने को तैयार हो गई है। आप काजू और बादाम के टुकड़े लौकी की खीर पर डाल दें और खाने का आनन्द लें।

    My brothers and sisters,
    I will tell you how to prepare Bottle Gourd Pudding. Its preparation is very easy. Bottle Gourd Pudding is very healthy and tasty one.

    Ingredients:
    ½ litre of Cow’s milk, 1 Bottle Gourd (weight 400 grams), 100 grams Sugar, little Cardamom (take out skin of these and make powder of the black seeds), some of Cashews and Almonds (cut these into small, small pieces)

    Method:
    Scrape the outer skin of the Bottle Gourd by a scraper. Cut the parts on both sides of it. Cut this into 2-3 pieces vertically. Cut these into half in the middle. Take out seeds etc., from the middle part. Shred remaining Bottle Gourd into fine, fine pieces by a grater. You keep it separately. Put shredded fine pieces of Bottle Gourd in the steel vessel and fry it with little pure Cow’s Ghee for 2-3 minutes. Keep steel vessel on gas stove. Afterwards put ½ litre of Cow’s milk. Before putting the milk you should put little water so that milk will not stick to the bottom of steel vessel. Immediately you turn the gas knob on. When milk starts boiling then you put Bottle Gourd shredded fine pieces in steel vessel. When milk reduces to ¾th on boiling till then go on stirring the milk. Milk should not stick to the bottom of steel vessel. You put Cardamom powder in the milk. Allow the whole solution to boil for 2-3 minutes. Afterwards put 100 grams of Sugar. Allow the same to heat up for 2 minutes because water let out from Sugar will dry up. Afterwards put off the gas. Bottle Gourd Pudding is ready to eat. You put Cashew and Almond pieces in the Bottle Gourd Pudding and enjoy eating.
