Broccoli is a member of the cabbage family, and is closely related to cauliflower. Its cultivation originated in Italy. Broccolo, its Italian name, means “cabbage sprout.” Because of its different components, broccoli provides a range of tastes and textures, from soft and flowery (the floret) to fibrous and crunchy (the stem and stalk). Broccoli contains glucosinolates, phytochemicals which break down to compounds called indoles and isothiocyanates (such as sulphoraphane). Broccoli also contains the carotenoid, lutein. Broccoli is an excellent source of the vitamins K, C, and A, as well as folate and fiber. Broccoli is a very good source of phosphorus, potassium, magnesium and the vitamins B6 and E.

Crispy and nutty seeds crackers is a great low carb snack. Its great eating on its own but its even better when you add your favorite toppings. We love to top it with butter, avocado, cheese, cherry tomatoes.

The list of ingredients might seem quite long and we agree, it is! But, the good thing is that its worth it!

The secret for binding the ingredients and make it spreadable is the amazing Psyllium husk powder. Psyllium, we love you for that! If you can not find Psyllium in your local grocery store we recommend ordering it from online (our favorite is Iherb).

Believe us when we say that we have tested a lot of seed cracker recipes. This inspired us to create our own Jipbop version!

Recipe

1cup (140g) sunflower seeds
1/3cup (40g) pumpkin seeds
1/3cup (50g) flax seeds or chia seeds
1/3cup(50g) sesame seeds
1/3cup (20g) shredded coconut
2Tbsp ground psyllium husk powder
2Tbsp tablespoons almond flour
1tsp salt
2cups (500ml) water

Preheat the oven to 160°C (300°F) and line 2 baking sheet with parchment papers.
Mix all the dry ingredients in a bowl and add water.
Mix well until the water absorb and the mixture thickens.
Spread evenly on the baking sheets as thin as possible.
Bake for 30 minutes, take it out to cut into desired pieces, and put it back for additional 30-40 minutes or until dried completely.
Tips – The crackers will stay crisp when stored in an airtight container in a cool and dry place.
