Easy Broccoli Soup:

1 1/2 lb. broccoli
1 medium onion chopped
1 potato chopped
2 tablespoons Knorr chicken powder
or use unsalted broth
1/2 teaspoon salt or to taste
3-4 cups water
1 cup (or little more) sour cream
pinch (or more) nutmeg

Simmer until potato and broccoli are very tender, about 10 minutes. Remove soup from heat and purée in a blender until smooth.
