[What is Andrographis?]

Andrographis paniculata is a bitter tasting annual plant, referred to as the “King of Bitters.” It has white-purple flowers and it is native to Asia and India where it has been valued for centuries for its numerous medicinal benefits. Over the past decade, andrographis has become popular in America where it is often used alone and in combination with other herbs for a variety of health purposes.

[How does it work?]

According to Memorial Sloan-Kettering Cancer Center, the active ingredient in andrographis is andrographolides. Due to the andrographolides, andrographis has potent anti-inflammatory and antimalarial properties. It also has antimicrobial properties, meaning it can help to fight off and prevent infections from harmful microorganisms such as viruses, bacteria and fungi. In addition, andrographis is a powerful antioxidant and it can help to prevent free radical induced damage to your cells and DNA

Scientists have discovered that andrographis helps to boost the immune system by stimulating the body’s production of antibodies and macrophages, which are large white blood cells that scavenge harmful microorganisms. Andrographis may cause unwanted side effects such as headaches, fatigue, allergic reactions, nausea, diarrhea, altered taste and pain in the lymph nodes. Ingredients
1½ cups (375 mL) cake flour
¼ teaspoon (1 mL) salt
1 Tablespoon (15 mL) baking powder
3 Tablespoons (45 mL) sugar
1½ cup (375 mL) evaporated milk
1 lemon (zest & juice)
1 large egg
1½ teaspoons (7 mL) pure vanilla extract
2 Tablespoons (30 mL) butter, belted
1 cup (250 mL) blueberries
extra butter

Method:
Heat heavy skillet over medium heat.

Mix evaporated milk, juice of 1 lemon, and lemon zest. Allow to sit for five minutes.
In a medium bowl, mix flour, salt, baking powder, and sugar. To the milk mixture add egg, vanilla, and melted butter. Whisk to combine.
Pour wet mixture into dry ingredients. Stir gently to combine. Stir in blueberries.
Melt butter in heated skillet. Drop batter by 1/4 cup measures and fry pancakes on both sides until golden.
Serve with maple syrup.
