UPDATE! So a week and some days later, we’re having leftovers from this recipe. INGREDIENTS:
2 cups cashew milk
1 mashed sweet potato
10 oz of unsalted macadamia nuts (soaked overnight and drained)
4 tbs grapeseed oil
4 tbs nutritional yeast
4 cloves minced garlic
1/2 tsp of:
mustard powder
turmeric
paprika
onion powder
cayenne pepper
crushed round crackers (We used these: https://www.backtonaturefoods.com/what-we-make/crackers/classic-round/)
1) Blend until creamy: macadamia nuts, sweet potato, nutritional yeast and cashew milk.
2) Heat the grapeseed oil and garlic on med-high heat until fragrant.
3) Pour in the macadamia cream blend and stir.
4) Add all the spices and salt and pepper to taste.
5) You may add a little water to thin the cream, if needed.
6) Simmer on low for 3-5 minutes.
7) Dress your pasta and top with the crushed crackers and a pepper to taste.

Addendum: Also, something I (Ana) should’ve expanded on in the video is that the cholesterol number we should be looking at is the LDL cholesterol, not TOTAL cholesterol. The higher your HDL, the better, and that too can contribute to a higher total cholesterol number. In my specific case, my LDL was higher than my HDL, so no bueno!
Also, it IS possible to be genetically predisposed to higher than average cholesterol levels. This means your body produces a little more cholesterol than most, but if you drop meat and dairy, you WILL see a drop. Start there!
