※ 옥수수전분 대신 다른 전분도 괜찮긴한데요, 옥수수전분이 색도 뽀얗고 입에서 덩어리지지 않고 부드럽게 풀리기 때문에 옥수수전분이 좋긴해요. 전분마다의 차이점은 입에서 풀리는 식감이라던지, 점도, 색 등등 차이가 여러가지가 있다고 해요~ 그래서 요리 특성에 맞는 전분이 사용되는데요. 제과제빵은 옥수수전분이 보편적으로 사용됩니다

※ 설탕시럽은 120도까지 끓여주시는데, 온도계가 없다면 기포가 끈적하게 끓을때까지 끓여주세요.

※ 마시멜로우를 짜는 과정에서 굳어서 뾰족하게 서는 현상(마시멜로우화)으로 모양이 예쁘게 되지 않는다면 뜨거운물에 중탕을 해서 부드럽게 풀어준 뒤 다시 짤주머니에 넣고 짜주시면 돼요.
중탕법은 젤라틴 녹이는 방법과 동일합니다.

옥수수 전분 충분히 (다른 전분도 ok)
설탕 120g
달걀흰자 1개 (30g)
판젤라틴 4장 (8g) (가루 젤라틴 사용시 8g + 실온온도 물 40g)
물 35g
물엿 15g
블루베리 과즙색소 1TSP (15g) (일반 색소도 ok)
