Konjac is a plant that is found in China, Japan and Indonesia. The plant is part of the genus Amorphophallus. Typically, it thrives in the warmer regions of Asia.

3 tbsp (45 mL) olive oil
1 tbsp (15 mL) anchovy paste
1 clove garlic, minced
1/2 tsp (2 mL) lemon zest
2 tbsp (30 mL) lemon juice
1/4 tsp (1 mL) salt
1 green onion, finely sliced
2 tbsp (30 mL) chopped capers
2 tbsp (30 mL) chopped toasted pumpkin seeds
1 pkg (142 g) mixed greens such as baby spinach and baby kale (about 4 cups/1 L)

Directions:
1. In large bowl, mix together oil, anchovy paste, garlic, lemon zest, lemon juice and salt. Stir in green onion, capers and pumpkin seeds. Add mixed greens; toss to coat. Serve as a topper on your favourite pizza.

Tips:
- Omit anchovy paste and substitute with olive tapenade.

1/2 cup (125 mL) sweetened condensed milk
1/4 cup (60 mL) white vinegar
