Apple & Cranberry Croissant Bread Pudding : Recipes From Leftovers

Ingredients:

4 eggs
4 apples
1 lemon
1 cup sugar
5 croissants
1/2 cup cranberry
1,1/2 cup 10% cream
1/2 pancake syrup
1 tablespoon cinnamon
1 tablespoon vanilla extract

Directions:

(1) Place chopped apple into a mixing bowl then add cinnamon, vanilla extract and lemon juice, then mix ingredients together.

(2) Add maple syrup to apple then mix, pour apple mixture into a frying pan with melted butter and cook for 6-8 minutes at medium heat.

(3) In a separate bowl add eggs, vanilla extract and sugar then mix. Add cream to egg mixture.

(4) Cut croissants into small pieces and place in a mixing bowl, then add cooked apples and dry sweet cranberry.

(5) Combine wet and dry ingredients and leave to soak until the croissants soaks up the cream.

(6) Spoon mixture into greased ramekins then placed on baking tray and bake @ 350F , for 30-35 minutes.

Making a bread pudding is one of the best ways to use up old bread or croissants.

Bread pudding is served best when warm and with a Maple or chocolate syrup.
