Blueberry-banana Bread
Ingredients
Wet
-3 eggs
-80ml cold pressed macadamia oil/or coconut oil or your choice
-3/300g banana mashed
-handful of blueberries
-vanilla extract (few drops)
Dry
2 cups almond meal
1/3 cup chia seeds
¼ cup shredded coconut
2 tbs xylitol/ or raw honey
½ tbs gluten free baking powder
¼ tsp bi-carb
3 pinches of ground cinnamon
1 tsp lemon juice
Method:
1. Mix wet ingredients together in separate bowl. Mix dry ingredients in separate bowl
2. Mix wet and dry ingredients together, place in bread tin/glass container
3. Bake in oven for 1hour, at 160° (fan forced)
4. Wait till it cools down, take out from tin and enjoy ☺
