Blueberry Protein Pancakes

Hey guys! Today I’m making some tasty protein pancakes! Who doesn’t love pancakes, right? These are super healthy and the macros are amazing! Let’s get after it!

RECIPE:
-1½ scoops Quest® Vanilla Milkshake Protein Powder
-1 egg
-3 tablespoons liquid egg whites
-¼ cup unsweetened almond milk
-1 teaspoon vanilla extract
-2 teaspoon baking powder
-¼ cup zero-calorie sweetener
-3 tablespoons brown rice flour
-¼ teaspoon kosher salt
-1/2 cup sugar-free syrup
-Nonstick cooking spray

DIRECTIONS:
1. In a medium bowl, whisk together egg, egg whites, almond milk, vanilla extract and baking powder.
2. Mix in Quest Protein Powder®, sweetener, brown rice flour, and salt.
3. Spray a griddle with cooking spray and heat to 300°F, or spray a large nonstick sauté pan with cooking spray and heat over low-medium .
4. Scoop 2 tablespoons of batter onto the griddle per pancake.
5. Cook pancakes 2 to 3 minutes each side or until golden brown.
6. Stack 3 pancakes per plate.
7.Drizzle each stack of pancakes with 2 tablespoons of sugar-free syrup
