Broccoli Side Dish
To make this you will need:
Fresh broccoli
Golden raisins
Pine nuts
Chopped onions
Balsamic vinegar dressing/sauce (recipe below)
Bring a small pot of water to boil
Put the broccoli in the water and cook for 2-3 minutes; drain
In a small frying pan add:
The balsamic vinegar sauce
The golden raisins
The pine nuts
The onions
Sauté everything until softened about 2-3 minutes
Add the blanched and drained broccoli to the frying pan mixture
Coat broccoli
Serve and enjoy
Balsamic vinegar dressing/sauce:*
Olive oil (equal parts olive oil and balsamic vinegar)
Balsamic vinegar (I used raspberry balsamic vinegar)
Squeeze of stone ground Dijon mustard
Splash of water
Pinch of sea salt
Touch of garlic or garlic powder
Teaspoon of sugar (I used coconut palm sugar)
Mix everything together in a bowl
Add to frying pan to coat the broccoli, etc., as instructed above
*This “sauce” also makes a very nice salad dressing
