My parents request these biscotti for every occasion they can, but to me they’re a Christmassy recipe because of the beautiful colours. These are adapted from a recipe on All Recipes [here: https://allrecipes.co.uk/recipe/6424/cranberry-pistachio-biscotti.aspx], but I changed things around a bit and added some orange zest, which makes them really moreish.

I’m aware this isn’t a ‘traditional’ biscotti recipe as it contains olive oil, but these are delicious so I’m not really bothered.

Ingredients:
- 4 tablespoons olive oil
- 150g caster sugar
- 2 teaspoons vanilla extract
- 2 eggs
- 225g plain flour
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 100g dried cranberries
- 100g pistachios
- zest of one orange
