Cranberry Brownies
(By Caroline Manson, presented by Derbyshire County Council)
Ingredients:
100g unsalted butter
50g plain chocolate (I used cocoa powder)
150g caster sugar
2 eggs
4 tablespoons cranberry sauce
1/2 teaspoon vanilla extract
40g flour
A pinch of salt
Instructions:
1. Preheat the oven to 180 C (350 F) mark 4.
2. Melt butter and chocolate in a pan over a low heat until melted and smooth. Remove from heat.
3. Beat the sugar, eggs and cranberry sauce in a bow. Pour in chocolate mixture with flour, vanilla extract and salt. Mix well.
4. Pour into a tin and bake for 15 – 20 minutes. If you put in a cocktail stick or toothpick it should come out wet.
These brownies can also be frozen for a later date.
