Cranberry and Pistachio Bread / How to make cranberry nut bread.
Cranberry nut bread
Total time 1 hour 15 minutes / prep time 15 minutes /bake time 60 minutes
Ingredients
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 -1 tsp salt
1 cup whole wheat flour
1 cup all purpose flour
1/4 cup fresh orange juice or juice of 1 large orange
1 1/2 tsp orange zest
1/4 cup olive oil
3/4 cup milk
1 cup granulated sugar
1 large egg
1 cup fresh or frozen cranberries
1/2 cup pistachio chopped
Method:
Preheat oven to 350 degree F (180 degree C)
Spray or brush loaf pan with little oil.
In a large mixing bowl combine wheat flour,all purpose flour,baking powder,baking soda and salt and set aside.
In another mixing bowl, add sugar,orange zest,milk,olive oil,egg and orange juice.Combine with spatula or hand mixer.
Now pour the wet mixture into dry ingredients (flour mixture) and stir by hand just until combined.(Do not mix hard)
Add cranberries and pistachio into the batter and fold gently to combine.
Spread the batter into loaf pan.
Bake it for 60 minutes or until a toothpick or a knife inserted into the centre comes out clean.
Remove and transfer to cooling rack.Let it cool down before you cut the loaf.
Best served with coffee or tea.
Notes:
1. For orange zest, grate the skin of orange .
2. You can substitute pistachio to (walnuts or pecans)
