Delicious Tips – Kamut Coconut Oil Blueberry Banana Muffins
Today I’m making a batch of some of my favourite muffins! They’re super easy to make, good for you, and of course, delicious!
Combine dry ingredients in one bowl:
-1 cup kamut flour
-1/2 cup whole rolled oat flakes
-1 tsp baking soda
-1 tsp baking soda
-1/2 tsp cinnamon (to taste)
-pinch of sea salt
Combine wet ingredients in separate bowl:
-2 ripe bananas
-1/4 cup maple syrup
-1/4 cup melted coconut oil
-1/2 cup rice, almond, or hemp milk
-1/4 cup applesauce combined with 1 tbsp or ground flax or chia seeds
-1/2 tsp vanilla extract
–mix well, leaving a few small banana chunks for texture
–mix wet ingredients into dry ingredients, combine well
–add in 1 cup fresh blueberries
–preheat oven to 350F, and spoon batter into a parchment-lined muffin tray
–bake for 20 minutes
