Apple-Cranberry Crumble
(Adapted from The Healthiest Diet on the Planet)
Serves 8 to 10
TOPPING
1/2 cup rolled oats
1/2 cup chopped walnuts OR almonds
1/4 cup whole wheat pastry flour
1/2 teaspoon cinnamon
2 tablespoon liquid sweetener (agave, maple syrup, date syrup)
FILLING
3 cups peeled, cubed apples (Bosc pears work, too)
2 cups fresh or frozen cranberries, thawed
1/3 cup brown sugar
2 1/2 tablespoons cornstarch or arrowroot powder
Preheat oven to 350ºF.
Mix topping ingredients together in a medium bowl; add liquid sweetener of choice and mix again until crumbly. Set aside.
Toss apples, cranberries, brown sugar, and cornstarch in a large bowl until well mixed. Transfer to a deep-dish dessert pan and sprinkle crumble over the top. Bake for 40-50 minutes, until the filling is bubbly and the top is slightly browned. Cool for 1 hour (that’s the hardest part of this recipe).
