➞ Ingredients (makes 4 servings):
4 oz Mascarpone Cheese
¼ Cup Unsalted Butter
1 heaping tsp Espresso Powder
1 Tbsp Water
4 Eggs – separated
½ tsp Stevia Drops
¼ tsp Monk Fruit Extract Drops (I didn’t use this, I just added more Stevia)
¼ tsp Cream of Tartar
Optional: Xanthan Gum or Glucomannan Powder
➞ Directions:
1. In medium saucepan, melt mascarpone and butter together.
2. Whisk in the espresso powder, water, and egg yolks.
3. Cook on low heat and stir occasionally until the custard thickens.
4. Remove custard from heat and stir in the liquid sweeteners.
5. Beat egg whites with the cream of tartar until stiff peaks form.
6. Gently fold egg whites into the custard mixture.
7. Chill in the fridge. If you want it a bit thicker, beat in some xanthan gum or glucomannan powder.
