RECIPE;
• 1/2 cup (125 mL) butter, softened
• 1 cup (250 mL) granulated sugar
• 2 eggs
• 1 cup (250 mL) mashed ripe bananas
• 1 tsp (5 mL) vanilla
• 1 tsp (5 mL) lemon juice
• 2 cups (500 mL) all-purpose flour ( I used whole wheat flour )
• 1-1/2 tsp (7 mL) baking powder
• 1/2 tsp (2 mL) baking soda
• 1/2 tsp (2 mL) salt
• 1-1/2 cups (375 mL) dried cranberries
• 1/2 cup (125 mL) chopped pecans (optional )
• 1/4 cup (60 mL) milk
In large bowl, beat butter with sugar until fluffy; beat in eggs, 1 at a time, beating well after each. Beat in bananas, vanilla and lemon juice.
In separate bowl, whisk together flour, baking powder, baking soda and salt. Stir into butter mixture alternately with milk, making 3 additions of dry ingredients and 2 of milk. Fold in cranberries.
Bake at 350 for approx. 25 mins, check after 15, than every 5, use a toothpick and poke inside, once the toothpick comes out clean, your muffins are cooking
This recipe made 12 muffins and a small loaf of bread.
