How to make EASY VEGAN PUMPKIN BREAD
EASY VEGAN PUMPKIN BREAD RECIPE:
(recipe from Elsa’s Wholesome Life – Ellie Bullen)
1 cup of wholemeal spelt flour
1 cup of self-raising flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 cups grated pumpkin
1 tbsp dried thyme
1 tbsp dried rosemary
1/3 cup olive oil
2 tbsp pumpkin seeds
1 tbsp whole flaxseeds
(optional: extra pumpkin seeds to sprinkle on top!)
First step: PREHEAT YOUR OVEN! 180 deg C or 350 deg F
1. Mix all dry ingredients together – then add the grated pumpkin and herbs.
2. In a new bowl, add oil, seeds and 1 cup of water.
3. Mix wet ingredients into dry ingredients.
4. Line a 20×10 baking tin with baking paper and put mixture in.
5. Sprinkle with pumpkin seeds (optional)
6. Pop in the oven for 50-60 mins and VOILA!
