This is one of my most nutrient dense dishes! This Grecian spinach recipe delivers many nutrients and others along with flavor that will leave you wanting more!

Ingredients:
1 Tbsp. coconut oil (extra-virgin, unrefined)
1/2 red onion, sliced into thin rings
2 lbs. fresh baby spinach, washed and stemmed
1/2 tsp. lemon peel, grated
1 tsp. sea salt
1/4 c. crumbled feta or goat cheese

Directions:
1. Heat large pan with lid over medium heat (if pan cannot hold all the spinach, cut recipe in half). Add oil and sliced red onion. Saute until onion starts to wilt.
2. Add spinach and quickly saute for 2-3 min. Add lemon peel, salt and pepper. Cook a few seconds more to release flavors. Add crumbled feta and stir to incorporate.
3. Transfer to serving dish and serve immediately.

Health Benefits:
-Coconut Oil: contains healthy saturated fat, lauric acid, which acts as a natural antibacterial and anti-fungal, as well as medium chain fatty acids, which help the body burn fat and lose weight. Coconut oil does not oxidize under high heat.
-Onions: contain allicin, a natural anti-fungal and antibacterial, as well as sulfur, to help detoxify the body from heavy metals
-Spinach: nutritious superfood; excellent source of calcium, potassium, magnesium, folate, manganese, protein, and fiber; alkalizing and anti-inflammatory to promote health and reverse disease in the body
-Lemon: excellent source of Vitamin C to strengthen the immune system
-Sea Salt: great source of magnesium, potassium, and trace minerals
-Goat Cheese: loaded with protein and calcium, more alkalizing
