How to Meal Prep for the Week (VEGAN, HEALTHY + EASY)

Kate Flower’s dressing recipe:
Mac n cheese sauce:
2 cups diced potatoes
1 cup diced carrots
1/4 cup diced onion
2 cups nutritional yeast (save 1/2 cup for end)
1tbsp garlic powder
1/2 cup of water from the pot (used to boil veggies)
1/3 cup plant based milk
Juice from 1/2 a lemon
1/2 tsp paprika
1 tsp mustard
1/2 tsp sriracha
1 tbsp tomato paste
1/2 tsp each salt and pepper
Make the nacho cheese by adding sautéed onions, canned diced tomatoes and green chilis.

Creamy low fat chipotle sauce:
1 cup silken tofu
handful of cilantro
1-2 TBS chipotle in adobo
1 clove of garlic
lime juice to taste
salt to taste
Curry lentil Dahl:
1 sweet potato, diced
1 large carrot, diced
2 stalks of celery, diced
1 medium onion
5 cloves of garlic, minced
1 1/2 quarts of vegetable stock, or more if needed
1 TBS harissa paste
2 tsp ground coriander
1 tsp ground cumin
2 TBS curry powder
salt and pepper to taste
1 cup red lentils
1 can of coconut milk
broccoli florets
