From 4K’s Recipes – UDUPI STYLE SAMBAR : Udupi is a district in (South Indian) Karnataka state Udupi sambar is curry made using most of vegetables like Carrot, Raddish, Drumstick, Potatoes, Brinjal & using home made sambar powder or paste to get authentic Udupi tast. We can have sambar with Idli, Dosa, Poha, Rice, Roti, Upma and many more.

Ingredients for sambar masala:
- 2 tbs chana dal
- 2 tbs urad dal
- 1 tbs cumin seeds
- 1/4 tbs fenugreek seeds
- 3 tbs coriander seeds
- 1/2 cup Fresh coconut grated
- 8 to 10 dry red chillies
- Water

Ingredients for sambar:
- 2 cups toor dal ( pressure cook )
- 4 to 5 tbs oil
- 1 tbs mustard seeds
- 1 tbs cumin seeds
- Pinch of hing
- Curry leaves
- 2 onions cut into lengthwise
- 2 tbs chilly powder
-Salt
- 1 potato peeled & cut into cubes
- 1 carrot cut into cubes
- 1 brinjal cut lengthwise
- 2 cut and boiled drum sticks
- 2 tomato puree
- 3 to 4 tbs Tamrind juice
- Water
- Coriander leaves

Ingredients for tadka:
- 2 tbs oil.
- 3 dry red chillies

NOTE : you can add jaggery. Few people prefer to add it & few are not.
