Lemon Blueberry Cake Recipe
Ingredients:
1 – 12 ounce package Nestle White Morsels – split
1 – 1/2 cups granulated sugar
1 cup unsalted butter, softened
1 teaspoon vanilla extract
3 large eggs
1 tablespoon lemon zest
1/4 cup lemon juice
1 cup buttermilk
2 cups fresh blueberries
2 tablespoons to mix with white morsels – split
Dry ingredients:
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
Preparation:
1. Preheat oven to 350. Grease 10-cup Bundt pan.
2. Melt 1 cup morsels in medium high microwave oven with 1 teaspoon shortening, stir until thin
3. Combine flour, baking powder and salt in small bowl.
4. Combine sugar, butter and vanilla extract in large mixer until creamy.
5. Add eggs one at a time
6. Gradually mix dry ingredients
7. Add buttermilk mix until smooth
8. Bake for 62 minutes
9. Cool on wire rack for 1 hour
10. Melt remaining morsels with shortening
11. Drizzle over cake and allow to set for 30 minutes.
