Store bought fondant is 10 times as expensive as the equivalent homemade product. This shows how to to convert sucrose (table sugar) into glucose and fructose (invert sugar), then how to mix and form into fondant. This is the proper method for creating sugar that’s edible by honey bees, and for creating a sweeter sugar for cake fondant. Most baking fondant videos just mix powdered sugar, water and flavoring, but in this one I show the proper way to use heat and acid to convert table sugar. I don’t discuss flavouring or colouring for cakes, but you can simply add these during the mixing step.
