Trail Mix Bars
Recipe:
Ingredients
1 egg
½ cup almonds
½ cup cashews
½ cup walnuts
½ cup unsweetened shredded coconut
½ cup raisins
¼ cup pumpkin seeds
¼ cup sesame seeds
¼ cup milled linseed/flaxseed
¼ cup dried cranberries
¼ cup coconut oil (melted)
¼ cup maple syrup
1 teaspoon cinnamon
1 teaspoon vanilla extract
Directions
Pre-heat oven to 350°F, 180°C, 160°C fan, Gas Mark 4.
In a small bowl, beat the egg.
Stir in coconut oil, maple syrup and vanilla.
Roughly chop all the nuts.
Mix chopped nuts and all the other dry ingredients in a large bowl.
Pour egg mixture into the dry ingredients.
Mix until everything is coated.
Line a baking pan with parchment paper.
Press mixture into lined baking pan.
Heat in oven for 15-20 minutes.
Allow to cool.
Cut into bars.
