These Muffins bake up light and tender…….
6 Tablespoons oil your choice
1 cup milk
1 cup all-purpose flour
1Tablespoon baking powder
1/2 cup brown sugar
1 2/3 cups oats
3/4 cups frozen or dried cranberries
2 eggs room temperature heated first
1 teaspoon vanilla
Combine flour and baking powder in bowl and stir in oats and sugar
In mixer bowl beat eggs mix in oil, milk till combined.
Add dry to wet ingredients till smooth don’t over beat. Add cranberries till combined.
Pour batter equally important n 12 muffin liners
Bake at 400 F 15 – 20 minutes place hot muffins pan on cooling rack for a couple of minutes then remove and place muffins onto rack.
