Pumpkin Pie Overnight Oats || How To (Vegan)

Overnight oats have become my new obsession as of late. Several blogs offered recipes that I slightly tweaked based on the ingredients I had. Feel free to change up this recipe however you want!! The recipe:

1/2 cup oats
1/4 cup non-dairy yogurt (I used homemade soy yogurt)
1/2 cup non-dairy milk (I used Kirkland soymilk from Costco)
1/4 cup pumpkin puree
3/4 tbsp agave nectar (other recipes call for 1 tbsp maple syrup, but I don’t have that on hand currently)
1/2 tsp vanilla extract
2 tsp chia seeds
1/2 tsp pumpkin pie spice

Mix that sh*t up!! Mix it REAL good! Place in container of your choice. I prefer glass mason jars and am in desperate need of pint jars…

Refrigerate overnight. Before eating, add toppings of your choice: fresh fruit, chopped nuts, oats, cocoa powder, cinnamon, etc. You’re limited only by your imagination! :)
