Raw honey is mediated by its sellers to have many benefits & uses over regular honey that is found in grocery stores. While not all demands have been proven, there are definite distinction between raw & regular, or commercial honey, for example certain health benefits, taste, aroma, color & texture
Pasteurization
The main difference between raw & regular honey is, regular honey is pasteurized & filtered. Pasteurization is the method where honey is heated at a high temperatures to destroy any yeast which may be present to prevent fermentation. To keep the honey from becoming granulated it is also done, making it look better to consumers. Commercial honey is uniform & smooth in color but raw honey is milky in color & may have granules which can be melted in hot water, if desired. It can be occupied that, any honey not labeled unpasteurized has gone through the pasteurization method.
Other Differences
Raw honey holds all of the nutrients necessary for proper health: vitamins C, D, A, E & high concentrations of B-complex vitamins including riboflavin, thiamin, niacin & pantothenic acid. It also has beneficial enzymes & other nutrients. High heat destroys most of the enzymes & some vitamins, for this pasteurized honey or commercial honey does not have as many health benefits as raw honey. One of the enzymes raw honey contains is amylase, that helps in digestion by helping predigest breads & other starchy foods, according to Benefits of Honey. Also raw honey has better taste, aroma & a darker color than its pasteurized counterpart.
