Why is red wine, in moderation, healthy? Scientists first discovered the resveratrol in wine when they were doing research into the ‘French Paradox’.

Researchers were trying to work out why the French have a fatty diet with lots of cheese and cream … and yet they have a 42% lower rate of heart disease than Americans.

The answer turned out to be resveratrol, ellagic acid, quercetin and other molecules in wine.
Resveratrol is an antioxidant found in several dietary plants as well as red wine. It has recently gained popularity for its association with the French Paradox, which is the belief that the daily consumption of red wine helps prevent the development of cardiovascular diseases. A number of studies have also shown that resveratrol may protect against age-associated diseases including cancer, diabetes, Alzheimer’s, and cardiovascular and pulmonary diseases. The design of an industrial scale process to produce and extract resveratrol from muscadine grape cell cultures with the aid of an elicitor will be presented. The elicitor promotes increased production of resveratrol in the cells as well as excretion of resveratrol into the culture medium, simplifying the final extraction steps. A cell culture production process is more environmentally friendly than conventional extraction methods and results in a naturally derived product. The purified resveratrol will then be used in health supplements and cosmetic products.
