Roasting chicken is quick and simple. Without using a rotisserie, I normally roast the chicken sitting up so that the entire chicken is evenly roasted. I use the middle part of a chiffon cake pan to sit the chicken. Some recipes use a beer can half-filled with water (or beer?) to sit the chicken which works just as well.

I normally marinade the chicken with soya sauce and ginger extract. Sugar or maltose can be added to the seasoning to make the skin crispy when roasted.

For a medium size whole chicken, roasting time is about 50 – 60 minutes, perfect for a weekend dinner with the family. The mashed sweet potatoes and sautéed vegetables can be prepared while roasting the chicken.
