1 onion
2 garlic cloves
2 tbsp butter
1 carrot
1 liter vegetable or chicken broth
2 cups coconut milk
1 small piece of ginger
1/2 tsp curry
1/2 tsp chilli powder
1/2 tsp thyme
salt
fresh ground pepper
croutons
toasted pumpkin seeds for garnish
