The Best Broccoli Salad | Vegan & Gluten Free

INGREDIENTS
Salad:
▪ 1 Head Broccoli, chopped
▪ 1/2 Onion, medium, chopped
▪ 1 C Raisins
▪ 1 C Sunflower Seeds
▪ Dressing
Dressing:
▪ 1 cup raw Cashews, soaked at least 2 hours
▪ Juice from 1 Lemon
▪ 2 T Extra Virgin Olive Oil
▪ 1/4 cup Water
▪ 2 T Onion
▪ 1 clove Garlic
▪ 2 T Agave or Honey
▪ 1/2 T Mustard Powder (Optional)
▪ Pinch Unprocessed Salt
Combine dressing ingredients in blender or Vitamix. Mix until silky smooth.
Mix together broccoli, raisins, onion, raisins, and sunflower seeds. Top with dressing and stir until well coated.
