The Nutrition Mom’s Broccoli & Cheese Casserole!
Stephanie Merchant, The Nutrition Mom shares her recipe for a true comfort food – Healthy, Gluten-Free, Paleo Broccoli Cheese Casserole aka Green Rice.

Ingredients for Rice:
1/2 to a whole head of cauliflower
2 Tbsp of healthy oil or butter
sea salt (and your other favorite herbs/spices) to taste
Directions:
Cut cauliflower into florets and pulse in food processor, until it reaches rice consistency. If you don’t have a food processor, you can use a hand grater.
Add oil/butter to a large skillet over medium heat. Add cauliflower rice and sprinkle with sea salt. Cook 5-8 minutes or until desired consistency. Cover skillet for softer rice.
Steam the florets from one head of Broccoli.
Make your Dairy Free Cheese:
Ingredients:
½ cup olive oil
1 ½ cups orange/red bell pepper
½ tsp minced garlic
1 cup cashews, soaked 4-6 hours, drained and rinsed
1 tsp sea salt
4 Tbsp Nutritional Yeast
1 pinch turmeric
¼ tsp onion powder
½ tsp dry mustard
Blend all cheese ingredients in a blender or food processor until smooth.
Place rice and broccoli in large bowl fold in cheese and combine well. Serve and enjoy!
