Vanilla and blueberry vegan cake
Vegan recipe for de Vegan Bake-off 2016 contest. A really tasty and fluffy cake for tea time.
Ingredients:
1/3 cup coconut oil.
1 cup brown sugar.
6 tbsp Aquafaba (from chickpeas can).
1/2 tsp vanilla extract.
1/4 tsp lemon zest.
1/8 tsp salt.
1 tsp baking powder.
1/2 tsp apple cider vinegar (for taste).
1 1/3 cups flour.
1 cup plant-based milk (I used soy milk).
