Vegan Vanilla Birthday Cake + Knowledge is Power
So it DOES turn out you can have your cake and eat it too! This recipe calls for one heck of a sweet celebration! It’s got sugar, yes it does! But see? You can have cake as tasty as any other, without contributing to the massively destructive industry that is animal agriculture. If you’d like, you can skip the frosting, and snack on the cake part with a cup of chamomile tea in the evening.
Many of you would flip were you to see the original recipe we adapted from. FOUR whole eggs, whole milk, buttermilk, and butter, and you’re not just loading up on sugar but on extra saturated fat, cholesterol, not to mention hormones, antibiotics and steroids! Yikes!
P.S. There won’t be salmonella in this cake mix! We encourage you to try it!
CAKE INGREDIENTS (dry):
3 cups whole wheat flour
2 cups cane sugar
2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
CAKE INGREDIENTS (wet):
2 cups almond milk
1 cup non-dairy butter (softened)
4 Neat Eggs
1/4 cup agave syrup
1/4 cup grapeseed oil
1 tbs bourbon vanilla extract
1) Whisk all dry ingredients together
2) Mix all wet ingredients together
3) Slowly incorporate dry mix into wet mix until the mix is thick and creamy
4) Place into two standard size greased cake pans
5) Bake for 25-30 min at 350F degrees
FROSTING INGREDIENTS
3 cups powdered sugar
1 cup non-dairy butter (softened)
1 tbs almond milk
1 tbs bourbon vanilla extract
Unsweetened cocoa powder (to taste) and (optional)
1) As with the cake mix, mix all the wet ingredients first, and then slowly incorporate the powdered sugar until creamy and thick!
2) Let the cake cool down before frosting, otherwise, the frosting will melt! Frost between the layers however you’d like! Frost the cake however you’d like! SPRINKLE or top with fruit! Sing happy birthday.
