INGREDIENTS FOR VEG CUTLET

• 1 bowl of boiled rice
• 1 grated large potato
• 3 tablespoons of corn flour for binding
• 1 medium size grated carrot
• 1 finely chopped onion
• 1 finely chopped capsicum
• Coriander
• 2 finely chopped green chillies
• 1 inch grated ginger
• 1 teaspoon red chilli powder
• 1 teaspoon black pepper powder
• 1 teaspoon amchur powder
• 1 teaspoon cumin-coriander powder
• 1 teaspoon roasted cumin powder
• Pinch of turmeric powder
• Salt as per taste
• 3 tablespoons of oil

METHOD FOR VEG CUTLET

• To start with take the rice in a bowl and mash it. Add grated potatoes, grated carrots, chopped capsicums, chopped onions, ginger, chillies, red chilli powder, amchur powder, turmeric powder, salt, black pepper powder, coriander – cumin powder, roasted cumin seeds powder, coriander leaves and lastly add corn flour. Mix well and make dough.

• Once dough is ready make tikkis (small cakes) out of it – Rub some cooking oil on your palms. Take some dough. Make a smooth ball and flatten it. In the same way keep making tikkis (small cakes) of all the dough prepared.

• Once all tikkis (small cakes) are ready, shallow fry them. Shallow fry the tikkis (small cakes) till golden brown on medium flame.Turn side of the tikkis (small cakes) and fry till other side also becomes golden brown. Tikkis are ready to serve.
