Love Child Pumpkin Yogurt Muffins
Ingredients:
1 ½ cup spelt flour
½ cup oats
¼ cup chia (mix with ½ cup warm water)
4 TBSP coconut oil
3 Love Child Apple Pumpkin Raisin Cinnamon Yogurt pouches
1 cup pitted dates
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
pinch salt
2 TBSP pepitas (pumpkin seeds)
Method:
Grease a 12 muffin tin and preheat oven to 350 degrees.
Mix water and chia together in a small bowl and let sit at least 5 minutes until it turns into a gel.
Combine all dry ingredients except dates and pumpkin seeds in a large bowl.
Blend wet ingredients (chia gel, coconut oil and Love Child purees) and dates in a high powered blender.
Pour wet ingredients into dry and mix.
Fill muffin tin cups 2/3 full, sprinkle with pumpkin seeds and bake in oven for 30 minutes.
