Ingredients:
2 cups whole wheat flour
6 ounces blueberries
2 cups buttermilk
2 large eggs, beaten
3 tablespoons butter, melted
2 tablespoons granulated sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/2 teaspoon salt
Directions:
In a bowl, whisk together the eggs, butter, sugar, vanilla extract, and buttermilk.
In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
Pour wet mixture into dry mixture and combine until lumpy.
Toss in the blueberries and fold until combined.
Set skillet to 375°F and pour 1/3 cup batter onto skillet.
Wait for 3-4 minutes and flip. Continue to cook for an additional 3-4 minutes.
Garnish with blueberries, add some syrup, and enjoy!
