Quercetin is a plant pigment (flavonoid). It is found in many plants and foods, such as red wine, onions, green tea, apples, berries, Ginkgo biloba, St. John’s wort, American elder, and others. Buckwheat tea has a large amount of quercetin. People use quercetin as a medicine.
Quercetin is used for treating conditions of the heart and blood vessels including “hardening of the arteries” (atherosclerosis), high cholesterol, heart disease, and circulation problems. It is also used for diabetes, cataracts, hay fever, peptic ulcer, schizophrenia, inflammation, asthma, gout, viral infections, chronic fatigue syndrome (CFS), preventing cancer, and for treating chronic infections of the prostate. Quercetin is also used to increase endurance and improve athletic performance.

GRAHAM CRACKER & ALMOND CRUST
-1 cup graham cracker crumbs
-1 cup sliced almonds
-2T. sugar
-4T. unsalted butter, melted
Directions:
1. Mix graham cracker crumbs, almonds, and sugar in food processor to mix.
2. Add in melted butter & pulse till it comes together.
3. Press mixture into a 9″ greased springform pan.
4. Bake at 350 degrees for 8 minutes.
CHEESECAKE
-12 ounces of Philadelphia cream cheese
-8 ounces goat cheese
-1/2 cup sugar
-3 eggs
-2 egg yolks
-6 ounces sour cream
-6 ounces blueberry jam
-2t. vanilla extract
-2T. Amaretto
Directions:
1. Mix room temperature cream cheese and room temperature goat cheese in mixer on medium speed.
2. Add sugar.
3. Add eggs, egg yolks, and vanilla extract on low speed.
4. Add sour cream and blueberry jam.
5. Add Amaretto.
6. Prepare springform pan by first wrapping it in plastic wrap and then aluminum foil.
7. Pour cheesecake batter into springform pan and then place in a roasting pan.
8. Fill the roasting pan halfway with hot water and bake at 350 degrees for 45-50 minutes rotating once halfway through.
9. Let cheesecake come to room temperature and then refrigerate overnight.
10. Remove springform pan and serve.
