[What is ginger?]

Ginger is a plant with leafy stems and yellowish green flowers. The ginger spice comes from the roots of the plant. Ginger is native to warmer parts of Asia, such as China, Japan, and India, but now is grown in parts of South American and Africa. It is also now grown in the Middle East to use as medicine and with food.

Love these little bites. They are perfect to take on the go and are a great snack option. They are super chewy, moist and oh so delicious. Give them a try!

Recipe: (makes around 20)
- 2 cups of oats
- 7-10 medjool dates (depends on how sweet you would like it)
- 1/3 cup of pumpkin puree
- 1 teaspoon of cinnamon
- 1/2 teaspoon of nutmeg

Pit the dates.

Blend the oats until flour like consistency.

Add the cinnamon, nutmeg, and pumpkin puree and blend.

Gradually add in the dates and around 3-4 tablespoons of water (especially if using a blender rather than a food processor).

Place on a tray and freeze for about 10-15 minutes so it’s a little easier to roll.

Roll into balls, optional to roll into various toppings such as shredded coconut, ground flax seeds, cacao powder, cinnamon, etc. And enjoy!
