  • What does the BVB eat on Christmas morning? Cinnamon Roll Rum Cakes of course! Mrs. Vegan and I had a LOT of fun crafting this recipe. Well, I think I had more fun that she did ;) . We made the recipe THREE times, and the third time was a charm.

    These cinnamon rolls are VEGAN, OIL FREE & LOW FAT. Ummm they are also really amazingly delicious!! The rum part really is totally optional. If you do use it, it is such a small amount and only for flavor.

    WARNING: Do not follow the recipe in the video. Use the one below. The video has clips from all three times we made it.

    MRS. VEGAN’S FAMOUS CINNAMON ROLL RUM CAKE RECIPE

    Ingredients
    - 3/4 cup nondairy milk
    - 1 packet active yeast
    - 1tb sugar
    - 5 tb applesauce
    - 3 cups whole wheat pastry flour
    - 1 tb baking powder*
    - 1/4 cup brown sugar
    - 1 tsp cinnamon
    - 1/4 tsp cloves
    - 1/4 tsp sea salt

    Filling:
    - 3 tb date paste
    - 1 tsp cinnamon
    - 1 tb apple sauce
    - 3 tb brown sugar
    - 2 tb cranberries (optional)

    Glaze:
    - 1 cup powdered sugar
    - 1 tsp dark Rum
    - 1 tb orange zest
    - 3 tsp nondairy milk

    Instructions
    - Preheat oven to 350F.

    - Place parchment paper in a circular cake pan and set aside.

    - Gently warm 3/4 cup non-dairy milk to about 110 degrees. Be careful it’s not too cold or hot; it will kill the yeast.

    - Sprinkle yeast and 1tb of sugar over warmed non-dairy milk and let it dissolve, about 10 minutes.

    - Combine 2 1/2 cups of flour, 1/4 cup sugar, 1 Tb baking powder, 1 tsp cinnamon and 1/4 salt in a large bowl. If your mixture looks too wet, add an additional 1/4 cup of flour.

    - Add 5 tbsp applesauce and yeast mixture, stirring spatula to combine. Add in another 1/4 cup flour, stirring to combine.

    - Sprinkle remaining flour on a flat surface (add more if needed) and knead dough, kneading in most of the flour. Knead about 15-20 times.

    - Place in a cover bowl for 10 mins.

    - Using wax paper and a rolling pin, roll dough out into large, thin rectangle and set aside.

    -Prepare filling by combining 3 Tb of date paste, 3 Tb brown sugar with 1 Tb unsweetened applesauce, 1 tsp cinnamon and cranberries if using. Spoon filling in the center of the dough and spread it around, leaving 1″ edge clear. Gently but tightly roll the dough up.

    - Use a pizza cutter, sharp knife or string to cut off 6 rolls and place into prepared cake pan and bake 20-25 min, until golden and cooked through.

    - Meanwhile, prepare icing by mixing 1 cup powder sugar, 1 tsp dark rum, 3 tsp non-dairy milk (plain or vanilla) and 1 Tb orange zest, whipping until it becomes a thick glaze with no sugar chunks. Spread glaze over hot buns.

    * Baking powder is used for a fast rise in the oven, for a traditional slow rise omit the baking powder and let the dough rise natural in a covered bowl for 1hr after kneading. Then let the dough rise again once the cinnamon rolls are rolled and placed in a circular dish. Cover and place the finished rolls in a warm area covered for 30 mins for the second rise then cook 20-25 mins.
