Ginger or ginger root is the rhizome (underground stem) of the plant Zingiber officinale, consumed as a delicacy, medicine, or spice. The sliced ginger that been pickled in a vinegar solution is served very often in Asian restaurants as a very popular delicacy. In Asian cooking, ginger is used as a preferred spice in the fresh, minced, crushed or sliced forms. Fresh ginger can be kept in the refrigerator for several weeks.
A recent study in muscle cells performed by researchers from the University of Sydney indicates that ginger (Zingibar officinale) were able to increase the uptake of glucose into muscle cells via insulin independent manner. The components responsible for the increase in glucose were gingerols, the major phenolic components of the ginger rhizome. Since skeletal muscle is a major site of glucose clearance in the body, this finding may light up the possibility of using ginger to help improve long-term diabetic blood sugar control.
Since ginger is frost-sensitive, and mostly grown in the subtropics and tropics, so it is necessary for those of us living in New York to grow ginger plants indoors for half of the year when it is cold.
I obtained a large ginger root from an Oriental market and cut a piece from it which already had some new buds cropping out, and grew it as indoor plant. I partially immersed the ginger rhizome into water with plant food in a container and placed it near a window with ample sunlight.
After 8 weeks, a healthy erect stem with three lance-shaped leaves appeared. The real “ginger roots” that started developing in earlier water cultivation were white in color. However, two weeks ago, the root system turned green, which I believe was due to green algae growing on the surface of the ginger roots. Since the algal spores are ubiquitous and the growth of algae may suffocate aquatic plants, cultivation of ginger in water has its limitation due to the cost consideration.
