Ingredients:
DRY-
1.5 cups wholemeal self-raising flour
1/2 tsp turmeric
1 tsp garlic powder
1 tsp ginger powder
pinch of chilli flakes
1/4 cup pumpkin seeds
WET-
300g pumpkin
1 tbsp apple cider vinegar
1 tbsp chopped jalepeno slices
2 tbsp sundried chopped tomatoes
1/3 cup sweet corn
1 flax egg (made from 1 tbsp ground flaxseed and 3 tbsp water)
1 tbsp miso paste
Method:
Preheat oven to 180C. Chop and boil pumpkin until soft. Combine dry ingredients in a large bowl. In a separate bowl mash pumpkin and mix in other wet ingredients. Add wet ingredients to dry ingredients and mix. Spoon into lined muffin tray (2 large tablespoons per muffin) and bake for 25-30 mins.
