Lauki ka raita is very refreshing and cooling specially in hot summer. Lauki or bottle gourd is very healthy and easy to digest vegetbale. Lauki or bottle gourd is prepared in various ways like lauki ki sabzi, lauki masala, lauki ka khatta, lauki kofte etc. Lauki or bottle gourd is very good food choice if you are working to shed some extra weight. Lauki or bottle gourd is considered as a very good weight loss vegetable. Lauki ka soup, lauki ka raita and there are various things can be made with lauki or ghiya in order to take care of your weight loss diet.
Here is the recipe for lauki ka raita. I have used ghee in preparing tadka for lauki ka raita but that is optional. If you do not want to add tadka, the please do not go for it. Here is the complete recipe to make Lauki / Ghiya ka raita.
Ingredients for lauki/ghiya/bottle gourd ka raita-
Bottle gourd- 200 gm.
Yogurt- 3 cups
Salt to taste
Black salt- ¼ tsp.
Ghee- 1tsp.
Cumin seeds—1tsp.
Red chili powder- ½ tsp.
How to make lauki / ghiya / bottle gourd ka raita-
Wash and peel bottle gourd, cut it into 4 long pieces. Now boil it in pressure cooker with ½ cup water for 1 whistle on medium high flames. Once the pressure cooker releases all steam, open the lid and wash bottle gourd with cold water. Now make medium pieces of lauki and make a thick paste in grinder. Now take beaten yogurt in a big bowl and add water according to the consistency you wish for lauki / ghiya ka raita. Now add lauki paste and mix well. Add water (if it is required). Now heat ghee in a pan and add cumin seeds, fry it till golden brown, then add this tadka in raita add black salt in it and garnish lauki/ghiya raita with red chili powder. Add salt before serving lauki raita. Our tasty , healthy and cool lauki ka raita is ready to eat.
