Broccoli is a member of the cabbage family, and is closely related to cauliflower. Its cultivation originated in Italy. Broccolo, its Italian name, means “cabbage sprout.” Because of its different components, broccoli provides a range of tastes and textures, from soft and flowery (the floret) to fibrous and crunchy (the stem and stalk). Broccoli contains glucosinolates, phytochemicals which break down to compounds called indoles and isothiocyanates (such as sulphoraphane). Broccoli also contains the carotenoid, lutein. Broccoli is an excellent source of the vitamins K, C, and A, as well as folate and fiber. Broccoli is a very good source of phosphorus, potassium, magnesium and the vitamins B6 and E.

Alote Chuco:
Blue Corn Chips
Red Beans
Dried Chili Peppers
1 oz. Pumpkin Seeds
1 tbsp. Lime Juice

Directions:

Separately grind chips, seeds, and peppers into a fine powder using food processor and coffee grind. Set aside in separate containers.

Clean beans and soak over night in water. Drain beans and simmer in warm water for about 2 hours, or until desired doneness. Drain water, set aside, and keep warm.

Bring 3 cups of water to a boil and stir in ½ cup of corn chip powder. Reduce heat and simmer for around 5 minutes, until lightly thickened. Pour or spoon hot Atole into a cup or bowl, mix in lime juice, 3 tbsp. of red beans, 1 tbsp. of pumpkin seed powder, and ½ tsp. of chili powder. Serve hot and enjoy.

Pours amber-orange with vertually no head, which is common for pumpkin beers. Tastes of candied pumpkin, nutment, ginger, lite cinnamon, clove and allspice. Thre roasted pumpkin seeds provide a nice roasty scent. Made with roasted pumpkin seed, which adds a nice roasted flavor. Some caramel and sweet malts blended with spices, but the pumpkin seeds truly carry this beer. A unique pumpkin beer!

Brewed with 7 1/2 pounds of pumpkin per barrel and spiced in conditioning with ginger, cinnamon, nutmeg, cloves and allspice. Both roasted and raw pumpkin seeds are in the mash, with pumpkin added to the mash, kettle and fermenter.
