This coconut curried chicken recipe is packed full of healthy fats and protein. Coconut has been around for centuries but has recently gained increased popularity in the media. Coconut oil has many health benefits and even aids in weight loss and helps to stimulate the metabolism!
Ingredients:
1 tsp. coconut oil
1 can coconut milk
2 lbs. chicken breast (organic, free range)
2 c. broccoli
1 onion, chopped
1 c. water chestnuts
4 cloves garlic, minced
1 tsp. fresh ginger root, grated
1 tsp. cinnamon
2 tbsp. curry powder
sea salt to taste
Directions:
1. Heat coconut on pan on medium-high heat.
2. In a large skillet, add coconut milk, chicken, broccoli, and onion. Cook on med/high for 15 min.
3. Add in water chestnuts, curry powder, garlic, ginger, cinnamon and sea salt. Stir and reduce heat to med/low and cook for 15 more min.
4. Serve and enjoy!
